Ahi tuna? Absolutely. Shrimp? You bet. Salmon? Sounds about right. But lobster? Most diners likely don’t expect to see lobster featured on a poke menu, but at Pokeworks, Lobster Surimi is one of several protein options diners can select when customizing a poke bowl, salad or burrito. “Guests do not associate such a premium product with the punchy flavors of poke,” says Mike Wu, co-founder and head of culinary. “Lobster simply does not exist in most poke shops!”
Originally positioned as the Luxe Lobster Bowl LTO, the Lobster Surimi generated phenomenal customer feedback and became a meaningful sales driver, eventually earning a spot on the permanent menu as a protein option, says Wu. “It’s a delectable fusion of flavors with a light-calorie and low- fat profile. The sweetness of surimi is mixed with rich, savory lobster to create a fresh, new twist,” he continues. The Lobster Surimi is combined with the customer’s choice of the brand’s signature sauces, which include Sriracha Aïoli, Sweet Chile Gochujang and Ponzu Fresh, as well as an array of vegetable and fruit mix-in options, plus additional toppings and a sprinkle of crunchy “crisps.”
