Such is the case with the King Royal Trumpet—a headliner at the mushroom-themed vegan restaurant Third Kingdom in New York. The sizeable raviolo is dyed with beet juice and stuffed with trumpet mushroom ragu, while white dots of plant-based “ricotta” adorn the cap. Broccoli-spinach sauce provides a verdant forest floor, but the scene isn’t quite complete without an array of flowers encircling the mushroom and completing the fairy tale of a dish.
