Banh mi op la is a Vietnamese egg sandwich that is served any time of day. It can be as simple as bread filled with a fried egg, herbs and charcuterie. Yet, I think the egg skillet banh mi style offers big opportunity for innovation.

Think fajitas prep: Heat a cast iron skillet, cook onions until caramelized, then add a cracked egg and splash with tomato sauce. Let it bubble until the egg is cooked. Top with cilantro and serve with a toasted banh mi on the side to dip, stuff and devour.
