So often when people gather to break the proverbial bread, they’re doing so with a hearty meal—not just starter rolls. Whether in a communal dish, a plated entrée or a convenient handheld, meat serves as a flavorful anchor that instantly dials up craveability. “Meat taps into our primal instincts and elicits strong emotions, making it a standout choice for experience-driven dining,” says Chef Itamar Abramovitch. In addition to his role as CEO and executive chef of Blossom Catering Company, Abramovitch also founded the (M)EAT CARNIVAL, a monthly event in Northern California that celebrates all things meat with chefs serving up premium cuts in creative formats.

“As a high-value item, meat naturally attracts attention and creates a sense of excitement. Unlike other options, like vegetables, meat tends to be memorable; people are more likely to recall the impressive steak they had rather than the side of carrots unless they were truly spectacular,” he adds. “This inherent ‘Wow!’ factor makes meat an ideal centerpiece.”

Abramovitch is hardly alone in his passion for carnivorous fare; many a chef can attest to the power that proteins hold over diners and menu developers alike. Meat can also be a great connector; flavors and formats may vary from cuisine to cuisine, but just about every culture has its version of fried chicken or marinated pork.

“As our world becomes increasingly interconnected, fewer culinary items remain mysterious or unfamiliar. Additionally, advancements in equipment and knowledge have significantly improved the overall quality and flavor of food,” Abramovitch says. “Today’s diners seek memorable experiences that go beyond mere nutrition, and restaurants can enhance this appeal by introducing innovative twists on these dishes, while still emphasizing the social aspect of dining.”
