“One of the most exciting ingredients I’ve discovered recently is Brazil’s baru nut. It has a flavor similar to a roasted peanut and is packed with protein and other nutrients. We are experimenting with dishes using this ingredient. As for fun flavor combinations, we have a ‘pink tart’ on our menu. We took a traditional Key lime pie and put a twist on it by adding ube powder, providing a great flavor and, more importantly, a beautiful magenta color.”
