Rock N Roll Sushi menus “concepts and flavors that are big, bold and loud.” Its Punk Rock Roll, a consistent top-three performer, clearly embodies the heart and soul of the brand. Its filling is composed of shrimp tempura, spicy tuna and cream cheese, while the outside of the roll features a draped slice of seared tuna topped by a mound of strawberry-avocado-jalapeño-cucumber salad spiked with a sweet chile-ponzu dressing, spicy mayo and eel sauce. “You first taste the sweet, sour and spicy topping, which leads you into the crispy panko shrimp blended with cream cheese,” says Joshua Patrick, culinary director/procurement director. “You’re left with the clean finish of housemade spicy AAA yellowfin tuna.”

Patrick credits the dish’s success to a balance of flavor elements, emphasizing the proper use of acid. “You have all five flavors—sweet, salt, sour, spice and fat—represented in one bite,” he notes. “The acid component comes from the use of the strawberries and ponzu. Plus, the variety of colors in the Punk Rock Roll is tremendous. It’s one of our showpieces that we put in front of anyone we want to impress, which is everyone!”
